I'm lucky enough to know many of these recipes first hand. The black bean and sweet potato stew never fails to amaze guests. Paired with the polenta dome, the presentation is perfect for a company dinner, vegetarian or not! Many of Lydia's recipes make satisfying side dishes for meat eaters, greatly simplifying cooking for guests with a range of preferences. Though I read Lydia's blog, the Perfect Pantry and it's my go to place for just figuring out new twists on ingredients at hand, It's great to have all of these gems in one place.I am gluten-and dairy-free and many recipes are or can be made GF, and DF. Lydia's creations are always well seasoned and even recipes that call for cheese are very tasty without it. Other favorites of mine are the Avocado-Edamame Spread, Pear and Parsnip Soup and Risotto with Pesto Peas and Pine Nuts.

This book saved the day! I was asked to find a kid-friendly vegetarian dish for 10 this year, and there were so many options in Meatless Mondays that were both easy to create and a twist on the traditional dish. I'm excited to share the Pesto Risotto, and I'm sure it'll be gobbled up in seconds. Thanks so much for creating this resource!
When I get a cookbook, I may make several recipes from the book, and only a few will be keepers that I go back to over and over. Meatless Holidays is a different kind of book. Every page has a recipe that calls to my taste buds. So far I have made Avocado-Edamame Spread, Squash Kibbe, and Sweet Potato Pecan Tarts, and every one is a keeper. Long after our Thanksgiving dinner, I'll be going back to try another recipe, and another and another. Lydia's recipes are clear and easy to follow; she's a good friend to have in the kitchen.
This book is loaded with delicious meatless recipes and links to many others not in the book.
As a vegetarian I always found holiday meals so awful. Same boring dishes and cardboard like flavors every year. People just don't know what to cook for those of us who are meatless. But this book opens up whole new possibilities and is NOT just for vegetarians. Create your holiday menu for your entire meal from here and people will be expecting you to do every holiday meal, forever! (Okay, you might want to be careful here. If someone asks you to be the "forever host," just get them a copy of this book for their very own. Problem solved!) With main dishes like Polenta with Wild Mushroom Ragout who even wants to eat meat? But, but if you want to add a simple roast of -you name it- for the meat lovers, that works too. Look, today we all need more veggies in our meals. This is a nice way to add more and not even notice. Included are yummy soups like Carrot-Ginger or Broccoli and Apple (you have to make this one!), appetizers like Avocado and Edamame Toasts (this is a keeper!), stuffings (cooked outside of the meat, of course), side dishes -hot and cold, and desserts. You can't miss with these recipes. So good even the kids will want to eat their vegetables!

Lydia Walshin has done it again with another e-book filled with really great recipes. This book has just the kinds of dishes you'll want to serve to your vegetarian or vegan friends for any kind of special occasion!
I have been searching for a cookbook I can use to prepare vegetarian dishes for my meat-free eating friends. Plenty of cook books are out there, but few are as interesting to read and contain such easy to prepare recipes as "Meatless Holidays." The step by step instructions are easy to follow and the pictures and links were really helpful in guiding me through the preparation necessary to complete the recipes. I enjoyed this book so much, I plan on giving it as a Holiday gift to my friends. And who knows? By the time I try all the recipes, I might just have to go completely vegetarian myself!
